Oatmeal Cranberry Cookies (Eggless)

Hello everyone! I am writing after a pretty long time, haven’t really got enough time to pen down things I have been trying off late. Well, these days everyone at home is trying to keep them fit and I try to help them.  So was looking at a few recipes to how to use Cranberry in cakes or any cookies as I had got a packet of Del Monte. Thought of making cranberry cookies, but wanted to try a healthier option. So made these Oatmeal Cookies with Cranberries. And Yes, these are Eggless. You can easily make them at home. Here it goes.

Ingredients-

 

  • 1 cup old fashioned Oats
  • 1 cup all-purpose flour
  • 1 cup desiccated Coconut
  • 1/2 cup Sugar
  • 1/4 cup light Brown sugar
  • 1/2 cup dried Cranberries (chopped roughly)
  • 1 tsp baking powder
  • 1/2 cup Canola Oil
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp Lemon extract
  • 10 tsp water
  1. Preheat oven to 350 degree F.
  2. Line a baking tray with parchment paper. Brush oil or butter.
  3. In a large bowl, mix all dry ingredients – oats, all-purpose flour, desiccated coconut, sugar, light-brown sugar. Mix them well.
  4. Then, add chopped cranberries. Toss them to coat.
  5. In another bowl, add baking powder, salt, vanilla extract, lemon extract to canola oil. Stir to combine.
  6. Mix the liquid ingredient into dry ingredient. Add water as required around 10 tsp. Stir to combine using a spatula.
  7. Take 1/8 cup cookie dough and drop it on the parchment paper. Flatten it using your fingers or the backside of your measuring cup (or any flat utensil). Repeat.
  8. Slide it into the oven and bake for 15-18 minutes.
  9. Allow it to cool on a wire rack. Then, store them in an airtight container and enjoy these crunchy yummy cookies.
